Quelles fleurs du jardin peut-on manger sans risque ?

Capucine, souci, bourrache, pensée, bleuet, œillet d'Inde, tournesol, ciboulette, monarde, mauve et coréopsis comptent parmi les plus sûres. La règle absolue : ne mangez que des fleurs cultivées sans traitement, donc semées par vous. Les plants achetés en jardinerie ornementale et les bouquets de fleuriste sont presque toujours traités.

Quand et comment récolter les fleurs comestibles ?

Le matin, une fois la rosée évaporée, en choisissant des fleurs qui viennent de s'ouvrir. Ne les lavez pas : secouez-les pour déloger les insectes. Utilisez-les le jour même, ou conservez-les deux jours au frigo entre deux feuilles de papier absorbant, dans un contenant fermé.

Mange-t-on la fleur entière ?

Cela dépend. Pensée, violette, bourrache et capucine se mangent entières, en retirant simplement les sépales poilus de la bourrache. Pour le souci, le bleuet, l'œillet d'Inde et le tournesol, on ne garde que les pétales : le cœur est amer ou coriace.
