About raw honey…

Raw honey contains specific, health-promoting components. Pasteurization and other heat processes can affect some of these components, including: pollen, propolis, certain vitamins, minerals, enzymes, amino acids, and antioxidants.

Unfiltered and never heated, our honey is raw. Freshly extracted by hand, it has a translucent appearance that is less uniform than some commercial honeys. Since we never liquefy our honey, all our production is carefully and manually bottled and labeled after a brief decantation in a vat.

These honeys are therefore likely to crystallize more quickly. This is an entirely natural phenomenon that only changes the color and texture of the honey. Crystallization will vary, ranging from creamy to grainy, depending on a variety of factors including water content, floral origin, and the balance of the main sugars.

Honey can easily be restored to its liquid consistency by placing it in a double boiler over low heat, where you can place your hand in it without burning yourself. Microwave heating is not recommended.

We are not certified organic, but all our products are sourced from responsible beekeeping practices. No antibiotics or chemical additives are used.

A white frosting can be observed in this honey, this is linked to the natural crystallization of raw honey.

Raw Blueberry Honey

Our blueberry honey comes exclusively from the pollination of wild blueberry flowers from the beautiful Lac St-Jean region. Amber in color, this honey has warm aromas with a slightly spicy finish. Harvested towards the end of June, this raw honey crystallizes quickly and coarsely, as it may also contain a slight amount of dandelion honey, depending on the year.

Raw clover honey

Harvested locally in late July in the northeastern Lanaudière region, our clover honey exudes subtle floral aromas and a particularly appreciated, delicate taste. It comes primarily from white clover, but also from alfalfa and several other summer flowers. Unlike other honeys, its crystallization remains relatively slow but will become granular.

Raw Goldenrod Honey

Our goldenrod honey stands out for its rich, slightly spicy flavor. Coming primarily from the wild, yellow-flowered plant that grows abundantly in Quebec in August, this honey is harvested locally in late summer. It also contains notes of bone weed, aster, and sometimes buckwheat. Ranging from golden to amber in color, this raw honey quickly crystallizes into a naturally fine and creamy form.

Raw buckwheat and goldenrod honey (not currently available at Semences du Portage)

The latest seasonal harvest from the Mauricie region, where buckwheat is widely grown, our goldenrod honey is enhanced by the scent of buckwheat growing near our apiaries. Dark brown in color, it is characterized by a more full-bodied taste than goldenrod honey. All the flavors of autumn are captured in this raw honey, which crystallizes finely and quickly.
