Mung Bean
Crisp texture and mild flavor. Popular in Asian cuisine as an accompaniment to a dish.
¼ cup of beans yields 2 to 3 cups of sprouts.

How to proceed?
Soak the seeds for 12 hours.
Drain and rinse with clean, lukewarm water.
For germination, use a Mason-style glass jar, cover it with double cheesecloth held in place with a strong rubber band.
Place the pot away from light, upside down, but at an angle to promote drainage.
Rinse twice a day until maximum germination.
Soak and rinse well to remove as much of the husk as possible. Drain well.
